Abstract: O objetivo dessa revisão foi identificar a doença celíaca e suas dificuldades quanto à adesão do doente dietoterápico sem glúten, seu comportamento emocional e conhecimento da doença. Glúten é encontradas no trigo, centeio, cevada, aveia e em seus derivados, e a intolerância ao glúten é uma anomalia autoimune do intestino delgado caracterizada por uma inflamação deste último em pacientes que sofrem desta patologia, ocasionando em uma atrofia de suas vilosidades, onde ocorre a absorção dos nutrientes, gerando uma má absorção alimentar. O glúten é muito usado pela indústria alimentícia como agente espessante, como “melhorador” de farinha, como um substituto da carne em produtos vegetarianos e até mesmo para aumentar a quantidade de condimentos, além de ser adicionado a caldos, molhos e feijão, para engrossá-los; portanto, todos os alimentos industrializados devem conter em seu rótulo, obrigatoriamente, as inscrições "contém glúten" ou "não contém glúten", pois a menor quantidade ingerida pode desencadear reações devido à lesão severa que tal proteína produz no intestino delgado. Aderir a uma dieta isenta de glúten não influencia apenas o consumo de alimentos, mas também a qualidade de vida dos pacientes, pois, no caso daqueles que não nasceram com a doença, os hábitos alimentares estão envolvidos com o sentimento dos indivíduos, estando relacionado a valores familiares e culturais. Nesse caso, pode-se considerar que a restrição alimentar causa sofrimento, rompimento do afeto, perda do alimento, entre outros, podendo ocasionar em diversos problemas psicoafetivos, desde uma depressão leve, uma simples ansiedade, até uma perturbação que afeta o processamento emocional.
ABSTRACT: The objective of this review was to identify celiac disease and its difficulties regarding adherence to gluten-free diet therapy patients, their emotional behavior and knowledge of the disease. Gluten is found in wheat, rye, barley, oats and their derivatives, and gluten intolerance is an autoimmune anomaly of the small intestine characterized by inflammation of the latter in patients suffering from this pathology, causing an atrophy of its villi, where nutrient absorption occurs, generating food malabsorption. Gluten is widely used by the food industry as a thickening agent, as a flour “improver”, as a meat substitute in vegetarian products and even to increase the amount of condiments, in addition to being added to broths, sauces and beans, to thicken them; therefore, all processed foods must contain the inscriptions "contains gluten" or "does not contain gluten" on their label, as the smallest amount ingested can trigger reactions due to the severe damage that such protein produces in the small intestine. Adhering to a gluten-free diet not only influences food consumption, but also the quality of life of patients, because, in the case of those who were not born with the disease, eating habits are involved with the feelings of individuals, being related to family and cultural values. In this case, it can be considered that food restriction causes suffering, disruption of affection, loss of food, among others, and can lead to several psycho-affective problems, from mild depression, simple anxiety, to a disturbance that affects emotional processing.
