dieta.

Functional foods are so named because they contain nutrients that offer health benefits beyond their basic nutritional function in food and should be safe for consumption without medical advice. Beta carotene is considered a functional food, because it is a carotenoid, present in foods with yellow-orange pigmentation, especially the carrot, and which is converted by the human body into vitamin A. It has diverse functionality such as antioxidant action, increased intercellular communication in several human tissues and the reduction of hypovitaminosis A, considered a current epidemic in Brazil. In view of this, the objective was to provide the consumption of this vitamin in a functional way, through the elaboration of a recipe for carrot cookies, financially accessible and healthy since the majority public involves children of low income and preschool age. The method involved the production of carrot cookies with chocolate drops and the results revealed that the product elaborated can be an ally in the prevention of Hypovitaminosis A, and the consumption of 5 servings - of 30g each - per day supplies the weekly need of Vitamin A. In addition, sensory analysis presented an acceptance of 87% of the judges for the criterion "I loved", being considered satisfactory. It is concluded, therefore, that the consumption of 250g of carrot per week is enough to prevent Hypovitaminosis A, without considering other sources of Vitamin A in the diet.
