Plantas alimentícias não convencionais (PANS): E-book, fichas técnicas e degustação para professores de uma escola pública do município de São Paulo

Abstract

O presente trabalho surge da necessidade de conceder algumas informações importantes para a população sobre as Plantas Alimentícias não Convencionais, mais conhecidas como PANCs. As PANCs são plantas com potencial alimentício e desenvolvimento espontâneo, porém não são consumidas em larga escala ou são utilizadas apenas em determinada região. Um exemplo disso é a vitória-régia, é uma planta que contém um fruto alimentício, mas poucas pessoas têm conhecimento sobre isso. Portanto, o objetivo do estudo é apresentar as PANCs a professores de uma escola pública do município de São Paulo, revitalizando e plantando as plantas em questão na horta da escola, para em seguida elaborar fichas técnicas com as receitas aprovados e um E-book com informações, receitas e fichas técnicas das PANCs, além de realizar a degustação das receitas com os professores da escola pública. Foram feitas pesquisas bibliográficas em livros e artigos científicos, foram consultadas as bases de dados Google Acadêmico, SciELO e PubMed para artigos publicados até janeiro de 2022, sendo utilizados aqueles que tivessem a temática insegurança alimentar e PANCs, demais que não se englobavam neste padrão, foram excluídos. A lacuna em relação ao conhecimento e utilização das PANCs foi comprovada por meio do questionário de conhecimento, por conseguinte, a degustação e o E-book fizeram papel divulgador. Portanto, se conclui a necessidade de apresentar as PANCs para a população, bem como sua utilização.

The present work arises from the need to provide some important information to the population about non-conventional food plants, better known as PANCs. PANCs are plants with food potential and spontaneous development, but they are not consumed on a large scale or are used only in a certain region. An example of this is the vitória-régia, it is a plant that contains a food fruit, but few people are aware of it. Therefore, the objective of the study is to present the PANCs to teachers of a public school in the city of São Paulo, revitalizing and planting the plants in question in the school's vegetable garden, to then prepare technical chart with the approved recipes and an E-book with information, recipes and technical sheets of the PANCs, in addition to taste the recipes with public school teachers. Bibliographic searches were carried out in books and scientific articles, the Google Scholar, SciELO and PubMed databases were consulted for articles published until January 2022, using those that had the theme of food insecurity and PANCs, others that were not included in this standard, were excluded. The gap in relation to the knowledge and use of PANCs was proven through the knowledge questionnaire, therefore, the tasting and the E-book played a disseminating role.
