Abstract: Desenvolvimento infantil e a formação de hábitos saudáveis. Este estudo teve como objetivo avaliar qualitativamente os cardápios oferecidos em um Centro de Educação Infantil (CEI) da zona sul de São Paulo. Trata-se de uma pesquisa fundamentada no método de Avaliação Qualitativa das Preparações do Cardápio (AQPC), que analisou o cardápio do mês de setembro de 2025 destinado a três diferentes faixas etárias: crianças de 6 meses, de 7 a 11 meses e de 1 a 3 anos. Os dados foram organizados por meio de avaliações diárias, semanais e mensais, quantificando as ocorrências em tabelas percentuais para verificar as técnicas de cocção, as combinações de cores e os grupos alimentares. Os resultados demonstraram aspectos positivos expressivos, como a oferta de frutas em 100% dos 21 dias avaliados e a total ausência de frituras, carnes gordurosas ou associação entre doces e frituras em todas as faixas etárias. Contudo, identificaram-se limitações importantes, representadas pela baixa frequência ou ausência de hortaliças folhosas, pela monotonia de cores em parte das refeições e pela elevada presença de alimentos ricos em enxofre nos grupos de crianças mais velhas. Conclui-se que, embora os cardápios apresentem boa conformidade com as diretrizes de promoção da saúde e prevenção de doenças crônicas, são necessários ajustes estruturais para ampliar a variedade alimentar e a oferta de micronutrientes essenciais, assegurando o pleno desenvolvimento biopsicossocial das A alimentação nos primeiros anos de vida é determinante para o crescimento, o desenvolvimento infantil e a formação de hábitos saudáveis. Omega-3 is an essential polyunsaturated fatty acid for the human body, associated with the prevention of cardiovascular diseases, the modulation of inflammatory processes, and the maintenance of cognitive health. This study aimed to analyze the consumption of omega-3-rich foods and the use of omega associated with the prevention of cardiovascular diseases, the modulation of inflammatory maintenance of cognitive health.
