Abstract: O soro de leite é um subproduto da indústria de laticínios com elevado potencial poluidor quando descartado inadequadamente, tornando seu reaproveitamento uma alternativa sustentável. Este trabalho teve como objetivo avaliar a utilização do soro de leite como substituto parcial da água na produção de cerveja artesanal do estilo Catharina Sour. Foram realizadas análises físico-químicas, incluindo pH, °Brix, cor, teor alcoólico, composição centesimal, glicídios redutores e dicetonas vicinais, além de pesquisa de aceitação das formulações produzidas. Os resultados demonstraram que a adição de soro de leite contribuiu para o aumento de proteínas, minerais e sólidos solúveis na bebida, porém interferiu negativamente no processo fermentativo, não sendo possível alcançar o teor alcoólico esperado para o estilo. Na pesquisa de aceitação, a formulação com soro apresentou boa aceitação para aroma e cor, enquanto a formulação padrão obteve melhor desempenho quanto ao sabor e preferência global. Conclui-se que o uso do soro de leite apresenta potencial promissor como alternativa sustentável na produção de cerveja artesanal, sendo necessários estudos adicionais para otimização do processo fermentativo e aprimoramento sensorial do produto.
Whey is a by-product of the dairy industry with high polluting potential when improperly discarded, making its reuse a sustainable alternative. This study aimed to evaluate the use of whey as a partial substitute of water in the production of Catharina Sour craft beer. Physicochemical analyses were performed, including pH, °Brix, color, alcohol content, proximate composition, reducing sugars, and vicinal diketones, in addition to acceptance survey of the produced formulations. The results showed that the addition of whey contributed to increased protein, mineral, and soluble solids content in the beverage; however, it negatively affected the fermentation process, making not been possible to achieve the expected alcohol content for the style. In the acceptance survey, the whey formulation showed good acceptance for aroma and color, while the standard formulation achieved better performance regarding flavor and overall preference. It is concluded that the use of whey presents promising potential as a sustainable alternative in craft beer production, although further studies are needed to optimize the fermentation process and improve the sensory characteristics of the product.
