Abstract: Este trabalho de conclusão de curso tem por objetivo identificar as espécies vegetais conhecidas como Plantas Alimentícias Não-Convencionais (PANCs) mais comuns na região de Jundiaí, SP, bem como descobrir e explorar seu uso culinário e averiguar as possíveis causas do seu desuso na dieta brasileira, visto que são plantas nativas e abundantes em todo o território nacional. Para esta pesquisa foram consultadas diversas publicações acadêmicas e livros sobre o tema, e realizadas pesquisas semiestruturadas de opinião com o público alvo deste trabalho (residentes do estado de São Paulo). Também foram pesquisadas e desenvolvidas receitas culinárias utilizando algumas PANCs encontradas nesta localidade. Os dados coletados revelaram que algumas destas espécies vegetais não são mais utilizadas na alimentação da população devido a diversos fatores, como o estilo de vida urbano e a falta de conhecimento sobre seus usos culinários, além do desconhecimento acerca dos modos de preparo destas plantas. No entanto, nos últimos anos tem havido uma crescente procura por essa fonte de alimentos e a divulgação deste assunto tem se ampliado consideravelmente.
This course conclusion paper aims to identify the vegetable species known as Unconventional Food Plants (UFPs) most common at the region of Jundiaí, SP, as well as discover and explore their culinary use and to find out the possible causes of their disuse in the Brazilian diet, since they are native and abundant plants throughout the national territory. For this research, several academic publications and books on the subject were consulted, and and semi-structured opinion surveys were carried out with the target audience of this work (residents of the state of São Paulo). Culinary recipes were also researched and developed using some UFPs found in this location. The collected data revealed that some of these plant species are no longer used in the population’s diet due to several factors, such as the urban lifestyle and the lack of knowledge about their culinary uses, as well as the unfamiliarity with the ways of preparing these plants. However, in recent years there has been a growing demand for this food source and the dissemination of this subject has expanded considerably.
