Produção de refrigerante

Abstract

Á indústria de bebidas no Brasil, é um setor muito importante pois é responsável pela geração de milhares de postos de trabalho, nos últimos anos o Brasil tem se destacado no consumo de cervejas e refrigerantes. Os refrigerantes são bebidas gaseificadas obtidas pela dissolução, em água potável, de suco ou extrato vegetal, e pela adição de açúcar ou edulcorantes. Um componente importante para produção de refrigerantes é a emulsão – mistura de dois líquidos imiscíveis –, é usado na produção de refrigerantes tipo cola, citrus e uva. As emulsões são responsáveis por acrescentar cor, odor, sabor, turbidez para o refrigerante, são também constituídas por antioxidantes, água, agentes emulsificantes e tensoativos, conservantes, acidulantes, corantes hidrossolúveis e lipossolúveis e aromas.
